The maitake mushroom - also known as Grifola frondosa, dancing mushroom, rattling sponge, sheep's head mushroom or spatula mushroom - grows in the root area of old deciduous trees.

In earlier times, Japanese and Chinese mushroom pickers kept the locations where this mushroom was found secret, as it was as expensive as gold and silver. Today, maitake can be cultivated and is also considered a delicious edible mushroom in gourmet kitchens around the world.
