Wild garlic (Allium ursinum) is also commonly known as wild garlic, garlic spinach or witch’s onion. It is related to chives, onions and garlic, and has a very similar flavour. In Europe and parts of Asia, it is mainly found in woodlands and is gathered in spring as a prized wild vegetable. Wild garlic often forms very large stands – in certain woods, the plant is so abundant that in spring the entire forest floor is covered with its leaves. For such vigorous growth, however, wild garlic must find optimal soil and light conditions. Generally, it thrives in shady, damp and humus-rich habitats such as deciduous forests.
Just two to three months after sprouting, the leaves wither again. By then, seed development must be complete and all nutrients must have been stored in the overwintering bulb. Wild garlic is particularly rich in the sulphur compound allicin. It also contains essential oils, iron, potassium, calcium, magnesium, manganese, phosphorus, selenium and vitamin C.
We harvest the wild garlic for our full-strength tinctures by hand with great care, exclusively in the open air. The alcoholic extraction process extracts both water-soluble and fat-soluble constituents from the plant in equal measure, ensuring that all the active constituents of wild garlic are present in the tincture. To ensure the highest quality, we completely avoid the use of chemicals and additives in the production of our wild garlic products.
