Rosemary is an evergreen shrub, an ancient medicinal and aromatic plant that is native to the Mediterranean and favours calcareous, sunny locations. Rosemary is a typical plant of the garrigue and maquis, but is also cultivated as a spice plant. In ancient times, rosemary was dedicated to Aphrodite and symbolised fidelity. Rosemary was an ingredient in the famous Hungarian Water, one of the oldest perfumes. It is an ingredient in the spice mixture Herbs de Provence and an important raw material for perfumery, cosmetics and pharmaceuticals.
