Barley grass is the young green barley plant that produces cereal grains when fully grown. The nutritional composition of barley grass is similar to that of green leafy vegetables, but has a much higher nutrient density. Barley grass is rich in valuable vital substances such as proteins, chlorophyll, antioxidants, flavonoids, vitamins (e.g. folic acid, vitamin D) and minerals (iron) and can therefore be described as a green superfood.
