Barley belongs to the sweet grass family (Poaceae) and is one of the oldest cultivated plants known to man. It is harvested when the nutrient density is at its highest, as young barley grass. It provides chlorophyll and antioxidants and is rich in proteins, vitamins and minerals. Of particular interest is chlorophyll, which is similar in structure to haemoglobin, the red blood pigment, and is very well and quickly absorbed by the body.
