Light-dried mushrooms are a vegan source of vitamin D. Mushrooms such as button mushrooms have an interesting ability that farmers have always used to get through the low-light winter months: If you dry mushrooms - such as button mushrooms - under UVB radiation, they accumulate plant-based vitamin D2. According to the latest studies, this is just as effective as animal vitamin D3. Both are converted into the active form in the body.
Vitamin D has a function in cell division and contributes to
- normal absorption/utilisation of calcium and phosphorus,
- to a normal calcium level in the blood,
- to the maintenance of normal bones,
- to the maintenance of normal muscle function,
- to the maintenance of normal teeth,
