The green-lipped mussel belongs to the mussel family and originates from the waters off New Zealand. There, the up to 17 cm large mussel has been a favourite and healthy food with many valuable nutrients among the Maori for centuries. It is valued primarily for its high content of glycosaminoglycans - an amino sugar - and its high protein content.
