Lecithins are accompanying substances in fats and oils and are particularly rich in egg yolks, vegetable seed cells and offal. They must be supplied in the daily diet as the human organism cannot produce sufficient amounts of lecithin itself. Lecithin belongs to the group of phospholipids. It is an important component of the cell membrane of all animal and plant organisms. In the human organism, the phospholipid is found particularly in the bone marrow, nerve tissue, heart and liver.
