It’s not a nut and isn’t meant to be cracked. Its name is misleading, as the nutmeg is actually the seed of a tropical fruit resembling a peach. That’s why it isn’t cracked but grated – over potatoes, tarte flambée and pumpkin soups, for example. And it’s best used fresh, as its resinous aroma is fleeting. Grating encouraged!
