The blue mallow – known in Austria as ‘Käsepappel’ – is just the right little herb when you’ve got a lump in your throat. Fresh as the morning dew and slightly tart, this tea goes wonderfully with Japanese cuisine and lamb stew. The ‘Käsepappel’ or wild mallow has nothing to do with the poplar tree. Its flowers ripen into cheese-wheel-like fruits, from which a ‘Papperl’ – a fortifying porridge used to nurse people back to health – was prepared in folk medicine. So the name is no coincidence.
