The Jerusalem artichoke extract favours the stabilisation of the hyaluronic acid polymer in a more compact spherical form. In this form, the hyaluronic acid is less exposed to the degradation phenomena that occur in an aqueous environment. Polyphenols contained in the extract, in particular chlorogenic acid, counteract the formation of oxygen radicals (ROS).
