It is the compound methylglyoxal (MGO), found in the nectar of the manuka flower, that gives manuka honey its valuable properties. The higher the MGO content, the more valuable and rarer manuka honeys are. The Mānuka plant has long been highly prized by the indigenous peoples of New Zealand for its beneficial properties.
