Physiological function of the nutrients
- Bromelain is a collective term for a group of plant enzymes from the cysteine protease family with proteolytic properties.
- Speciality: Bromelain already splits proteins in the stomach, whereas animal proteases are gastro-resistant and therefore only work in the small intestine.
- Extraction: From the lower section of the fleshy inflorescence axis (of the ripe pineapple), as this is where the bromelain concentration is highest.
