Niacin, also known as vitamin B3 or nicotinic acid, only occurs freely in nature in small quantities, mainly as an amide (nicotinamide). Natural sources of niacin are meat (beef, pork), yeast, rice bran and liver. It is widely distributed in many plant and animal food sources, except in pure fat. Vitamin B3 is of central importance for the metabolism of proteins, fats and carbohydrates.
This vitamin has the following functions:
