The red cinchona tree gained its fame and its name from the Countess de Chinchòn (1963). According to legend, the countess was cured of malaria by the influence of the cinchona bark. The bark of the red cinchona tree is rich in tannins and bitter alkaloids, including quinine, quinidine, quinchonine and quinchonidine. The peel of this bitter orange is valued for its high content of bitter substances. The root of the yellow gentian (Gentiana lutea) also contains some bitter substances. Amarogentin, which is stored in the root bark, is primarily responsible for the high bitter value.
