What makes broccoli so healthy?
Broccoli is a very healthy food. More and more media are now reporting on this. This type of cabbage belongs to the cruciferous plant family, which in addition to broccoli also includes cauliflower, red cabbage, white cabbage, kohlrabi, cress, radish, radish and horseradish. But what actually makes these cabbage varieties - and broccoli in particular - so healthy? Its secondary plant substances are crucial, especially the yellow plant pigment quercetin and glucoraphanin. After consumption, glucoraphanin is converted into the highly effective sulforaphane, a mustard oil glycoside, with the help of the enzyme myrosinase, which is also contained in broccoli. This produces the typical cabbage odour and taste. In the intestine, intestinal bacteria continue this conversion process. Broccoli seeds of the Brassica oleracea italica variety are particularly rich in glucoraphanin.
Broccoli extract + active enzyme makes ingredients usable by the body
If you want to make the most of the valuable ingredients in broccoli, especially glucoraphanin, you should therefore use an extract that also contains the enzyme myrosinase. Broccoli extract + active enzyme Dr Wolz contains both substances, which are obtained from broccoli seeds using a patented and very gentle process. This manufacturing process, in which the temperatures are always below 40° Celsius, produces an active combination concentrate in which the valuable secondary plant substance glucoraphanin is converted into the active substance sulforaphane by the enzyme myrosinase in the intestine and can thus be utilised by the body.
People who eat broccoli usually only absorb a small amount of sulforaphane
Anyone who thinks they are doing themselves some good by eating plenty of broccoli will be somewhat disappointed. Unfortunately, most of the newer varieties no longer contain much glucoraphanin. The valuable ingredients in broccoli are also destroyed during storage, freezing and, above all, cooking. The reason: the enzyme myrosinase, which converts glucoraphanin into the active ingredient sulforaphane, is particularly sensitive; it is already destroyed at 40 degrees Celsius. For this reason, broccoli should actually be eaten raw immediately after harvesting in order to absorb a sufficient proportion of the valuable ingredients. The quercetin content is also significantly reduced by storage and processing. Cooking destroys a large proportion of the quercetin.
High bioavailability
Glucoraphanin is only converted into the active substance sulforaphane by the enzyme myrosinase found in broccoli and our intestinal bacteria. So why don't we simply extract sulforaphane and offer it in capsule form? Some suppliers do this and sell dried sulforaphane. The problem is that sulforaphane extract is generally not very stable. It is better for the effect to combine glucoraphanin with the enzyme myrosinase - as with broccoli extract + active enzyme Dr Wolz. After consumption, one part is then quickly broken down into the active component sulforaphane and another part is broken down more slowly by the intestinal bacteria. The sulforaphane is thus made available to the body in its fresh state. These two processes result in a prolonged active ingredient level. As glucoraphanin and myrosinase are acid-sensitive, it is necessary to present them in a capsule that is resistant to gastric acid.
