The potato belongs to the nightshade family and is a staple food. In addition to a high water content, the potato provides carbohydrates, proteins, minerals, trace elements and vitamins, as well as proteinase inhibitors. These proteinase inhibitors are natural substances in plants that repel insects. Hormones and neurotransmitters are responsible for the process of controlling hunger and satiety. Cholecystokinin (CCK) is a key hormone that is partly responsible for digestion in the small intestine and for satiety. It is mainly released after the consumption of high-fat food, reduces stomach movement and delays gastric emptying. The result is satiety. Researchers have discovered that an increase in CCK levels can be triggered by protease inhibitors, so that a feeling of fullness occurs sooner
