Inulin is a natural product produced by plants. They use it as an energy store, which is recycled when needed. Inulin is mainly obtained from chicory root, Jerusalem artichoke and black salsify. We humans do not derive any energy from inulin, as we lack the enzyme required to break it down. For us, it is a dietary fibre that leaves our bodies virtually undigested. As a prebiotic, however, it serves as food for our gut bacteria and can therefore help to build up a healthy gut flora. Today’s diet usually contains far too few foods with prebiotic properties.
