Avitale Manuka Honey is produced exclusively in New Zealand. The plant, which is also called Manuka in the language of the indigenous people, grows in the rugged and remote mountainous regions of this small country on the other side of the world. The Manuka tree, also known as the South Sea myrtle, grows mainly in the mountainous regions of New Zealand. Bees extract a unique nectar from the flowers of the tree, which can grow up to 4 metres high, which is given a special property in the honeycombs in the beehive.

Even the Maori, the indigenous people of New Zealand, attributed special properties to honey and have been using it for centuries.

One reason for this could be the natural ingredient methylglyoxal, often abbreviated as "MGO", which has antibacterial properties. in 2006, the research team led by Prof Dr Henle from the Technical University of Dresden came to the conclusion through extensive research that manuka honey has a particularly high proportion of the sugar breakdown product methylglyoxal (MGO). Due to the special nature of the nectar of the Manuka tree, Manuka honey has a very high MGO content compared to other types of honey.

• MGO is largely insensitive to heat. Avitale Manuka Honey can therefore also be used without hesitation in hot food and drinks.
