Cranberry - the American cranberry
There is a close botanical relationship between the American cranberry and the cranberry that grows wild in Europe, as well as a close resemblance to the cranberry that also grows wild here. All berry varieties belong to the heather family and the blueberry genus. The cranberry (Vaccinium macrocarpon) grows as a shrub that creeps along the ground and develops roots and tendrils up to one metre long. The plants only thrive on acidic soils - preferably boggy soils with a sandy subsoil - they love a climate with cool, moist summers and a mild winter. The leaves are 1 to 2 cm long; they are oval, drooping with 4 crown tips. Cranberries flower in late June and early July and have pink-red flowers. The fruits are comparable in size to smaller cherries, when ripe they are bright red in colour and approx. 15 mm thick. Some varieties even turn so deep red that the berries appear almost black. They are characterised by a crunchy, firm flesh and a fruity, tart flavour. In addition to bitter substances, cranberries contain a lot of acid and pectin. This is why they taste tart and sour when raw. Their excellent flavour develops when cooked.
