Cranberry – the American cranberry

There is a close botanical relationship between the American cranberry and the wild lingonberry native to Europe, as well as a strong resemblance to the wild bilberry, which also grows wild here. All these berry varieties belong to the heath family and the blueberry genus.

The cranberry (Vaccinium macrocarpon) grows as a shrub that spreads by creeping along the ground and develops roots and runners up to one metre long. The plants thrive only in acidic soils – preferably boggy soils with a sandy subsoil – and favour a climate with cool, damp summers and a mild winter. The leaves are 1 to 2 cm long; they are oval, pendulous and have four lobes. Cranberries flower in late June and early July and have pinkish-red flowers. The fruits are comparable in size to small cherries; when ripe, they are a bright red colour and approximately 15 mm thick. Some varieties turn such a deep red that the berries appear almost black. They are characterised by crisp, firm flesh and a fruity, tart flavour. As well as bitter compounds, cranberries contain high levels of acid and pectin. This is why they taste tart and sour when eaten raw. Their excellent flavour characteristics are brought out when cooked.
