With the natural power of fermentation

Black garlic is not a new variety of garlic. Rather, it is produced when standard white garlic is fermented under controlled conditions using heat and air.
During this process, melanoidins (dark organic compounds) form from the sugars and amino acids in the garlic, turning the bulb black. The fermentation gives the garlic a soft, slightly sticky consistency. The typical garlic flavour shifts towards sweetness, with notes of plum, liquorice and balsamic vinegar. In Asia, it has long been prized as a culinary delicacy due to its flavour. There, fermentation (from the Latin fermentum: ‘fermentation’) has a long tradition as a method of preserving food.
However, a key advantage of fermentation – apart from preservation and enhancing the flavour – is the production of a garlic product that causes neither the typical mouth odour nor body odour. Through fermentation, the sulphur-containing compounds in fresh garlic are converted into stable, odourless substances that are not excreted via the skin or breath.
