In Central and South America, the Indians have been using the fruit of the pineapple plant since time immemorial. The pineapple plant contains the protein-splitting enzyme bromelain. Experts also call such enzymes proteolytic enzymes or proteases. Bromelain is extracted from unripe fruits and the stems of the pineapple plant, where the enzyme is present in high concentrations. A juice is first produced by squeezing the plant parts, from which the proteases are isolated and enriched using various processes.
