Alongside vitamin K, vitamin D is the only vitamin that our body can or must produce itself: It is formed via the skin under the influence of the UV rays contained in sunlight.
Vitamin D itself is not an active molecule; it is first transformed in our metabolism. Our body can then activate it as required. In the liver, for example, it is converted into a form that can be stored. In this form, it then moves into the fat and muscle tissue. If it is needed, it can be converted into its active form in the kidneys. Only recently has it been recognised that not only the kidneys, but also almost all other organs can produce the metabolically active metabolite of vitamin D.
In food, vitamin D is mainly found in salmon, tuna, hen's eggs, calf's liver, hard cheese and butter.
