Vanilla is a climbing plant that is cultivated in Madagascar, Reunion and the Comoros%%% vanilla spice is obtained from its fermented capsule fruits. The flower of the vanilla plant is constructed in such a way that it can only be fertilised by hummingbirds and certain insects. Artificial fertilisation with a small brush is therefore necessary. When fresh, the vanilla fruit is odourless%%% only a careful fermentation process produces the dark colour and fragrance of the so-called vanilla pod. Vanilla is used as a spice, especially for flavouring chocolate and cocoa.
