What is Jerusalem artichoke?

Jerusalem artichoke is the tuberous fruit of the Jerusalem artichoke plant - Helianthus tuberosus. The tuberous fruit contains the fructose polymer - inulin - as a carbohydrate. This carbohydrate is not broken down in the stomach and intestines. It passes through the intestine undigested and provides a fibre effect on the one hand and has a positive influence on the intestinal flora on the other.
