Cinnamon bark is a complex mixture of numerous substances. It is characterised by its antioxidant properties. Cinnamic acid has a positive influence on lipid peroxidation and cholesterol levels. Recent studies indicate a favourable influence on blood sugar levels and glucose metabolism, which can be attributed to the water-soluble ingredients of cinnamon bark (flavonoids - methyl hydroxyl chalcone polymers MHCP). An additional intake of cinnamon is particularly favourable for diabetics.
