Natural bitter substances are found in numerous plants. They do not constitute a uniform group of substances. Bitter substances are characterised solely by their bitter taste.
Bitter-tasting plant preparations have been used for thousands of years. The ‘bitterness value’ is used as a quantitative measure of a substance’s bitter effect. It indicates the dilution at which a substance is just about still bitter to the taste. One of the most bitter substances found in nature is amarogentin, derived from gentian root. Its bitterness value is given as 1:58,000,000; in other words, one gram of this substance diluted in 58,000 litres of water would still impart a bitter taste to this enormous volume of liquid.
Bitter substances can stimulate the secretion of digestive juices. Starting in the mouth with increased saliva secretion, the stimulus is transmitted to the digestive system. There is also an increased release of digestive juices in the stomach, pancreas, intestines and liver; the movement of the stomach and intestines is enhanced, the mucous membranes are moistened and stimulated, and their blood supply is improved. Furthermore, bitter substances act on the autonomic nervous system: on the one hand, they can stimulate and invigorate; on the other, they can also relax and soothe. This combination makes them ideal regulators of the digestive system and metabolism.
