Watercress (Nasturtium officinalis R. Br.) belongs to the cruciferous family (Brassicaceae). It prefers to grow near springs and streams. The most important constituents of cress include mustard oil glycosides, phenylaethyl mustard oils, bitter substances and vitamins. Hildegard von Bingen recommends preparing fresh watercress like spinach. It is also used in naturopathy as an important ingredient in spring cures, as it is said to have positive effects on the metabolism. Watercress is also used to stimulate the appetite.
