Savory (Satureja hortensis L.) belongs to the Lamiaceae family. The constituents of savory include essential oil, tannins, bitter principles, sitosterol and ursolic acid. Hildegard von Bingen was already aware of the beneficial properties of savory. Its positive effect on the gastrointestinal tract, in particular, has long been recognised. Savory is said to have properties that aid digestion, relieve flatulence and stimulate the appetite.
