Birches (Betula) are a plant genus in the birch family (Betulaceae). Unlike most tree leaves, birch leaves are edible. The ingredients are flavonoids, phenolcarboxylic acids, triterpene esters (such as betulin, betulinic acid), tannins and essential oil. Birch leaves are used for their positive effect on inflammatory urinary tract diseases and rheumatism.
